Most of BT, especially ch. 2 - 5, and in particular the first 
half of ch. 4.

"Gravitational Physics of Stellar and Galactic Systems", by
W. Saslaw, Cambridge: CUP (1985; paperback edn. 1987), is well
worth consulting.

An excellent, extensive review by J. Binney, in "Morphology 
and Dynamics of Galaxies", Saas-Fee 1982.  A short version
thereof in Ann. Rev. Astr. Aph. 20, 399 (1982).

The review by S. White in the same Saas-Fee volume provides
a good introduction to the (use of) N-body models.

You can find many worthwhile short reviews scattered in 
conference proceedings of mostly extragalactic stripes.
